A Few of My Favorite Things: Weelicious.com

I was a picky eater as a child. I still am a little hesitant to try new things, even as an adult. Whether it's nature or nurture, we'll never know. My children have healthy appetites, but are often just as hesitant to even taste a food they've never seen before. This means I end up making two dinners on most nights. Now, I'm not in the mood to be lectured about all the things I'm doing wrong by giving my kids options when it comes to dinner time. I realize that it will be a battle I will fight until they head off to college, but my maternal instinct to get food into my children's bellies outweighs any amount of inconvenience that comes with making two meals. Of course, I often find myself saving time by serving my kids fish sticks or chicken nuggets. As time goes on, I feel more and more guilty about this, even though I try to search out the nuggets and fish sticks that have the "healthiest" ingredients. One of my most recent resolutions is to try to serve fewer and fewer ready made nuggets o'meat , in favor of ones I make myself. I'm constantly on the search for recipes that are quick and easy, but involve fresh ingredients. In my most recent issue of Parents Magazine, there was a recipe from blogger Catherine McCord for homemade fish nuggets using cod and potatoes. The name of the blog was Weelicious.com, and I decided to check it out. I'm so glad that I did!

On Weelicious, you'll find tons of kid-friendly recipes from ages 6 months on up. Included are gluten-free recipes, dairy-free recipes as well as vegan and vegetarian recipes, too. One that I can't wait to try out on my kids is this recipe for Salmon Bites. They only require a few ingredients, and bake in 10-12 minutes! My husband and I love salmon, but salmon nights are usually one of those nights where my kids end up eating frozen fish nuggets instead. I'm so excited to serve up a kid-friendly version for them right alongside our grown-up meal. You can save your favorites or recipes you want to try right into your own recipe box, too!
